Ingredients

  • 1 kilo of beef (preferably ribs)
  • 1 kilo of pork (preferably chop)
  • 2 chickens
  • 1/2 kilo of sausage (sausage type)
  • 1/2 kilo of clams
  • 1/2 kilo of choritos (mussels)
  • 1/2 kilo of machas (giant clams)
  • 1/2 kilo of potatoes
  • 1/2 kilo of chuchoca (toasted corn flour)
  • 1 onion
  • 2 leeks
  • 1 green pepper
  • 1 red bell pepper
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

    Step 1
  • In a large pot, bring water to a boil and add the beef and pork. Cook for 30 minutes.
  • Step 2
  • Add the chickens and sausage. Cook for an additional 30 minutes.
  • Step 3
  • Add the clams, the chips and the machas. Cook for 10 more minutes.
  • Step 4
  • Add the potatoes, onion, leeks, peppers and bay leaf. Cook for an additional 20 minutes or until potatoes are soft.
  • Step 5
  • Add the candy and mix well. Cook for 5 more minutes.
  • Step 6
  • Serve the Curanto in a hot pot and serve with good Chilean wine.
