Moules Frites is a beloved Belgian dish that combines steamed mussels with crispy fries. The mussels are cooked in a flavorful broth, and the combination of tender seafood and crunchy fries is simply delightful.
2 kg (4.4 lbs) fresh mussels, cleaned and debearded
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons butter
1 cup dry white wine
1 cup chicken or vegetable broth
1 bay leaf
1 sprig of fresh thyme
Salt and black pepper to taste
Vegetable oil for frying
4 large potatoes, cut into fries

Instructions:
Step 1
In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
Step 2
Pour in the white wine and let it simmer for a couple of minutes to cook off the alcohol.
Step 3
Add the chicken or vegetable broth, bay leaf, and fresh thyme to the pot. Season with salt and black pepper. Bring the broth to a gentle simmer.
Step 4
Add the cleaned mussels to the simmering broth. Cover the pot and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.
Step 5
While the mussels are cooking, heat vegetable oil in a deep fryer or a large pot to 350°F (180°C).
Step 6
Fry the potato fries in batches until they are golden brown and crispy, about 3-4 minutes per batch. Remove them from the oil and drain on paper towels. Season with salt immediately.
Step 7
Serve the steamed mussels in bowls, along with a side of crispy fries. Enjoy your Moules Frites with some mayonnaise or aioli on the side for dipping!
