Ingredients

  • 4 whole fish (such as snapper or mackerel), cleaned and gutted
  • 2 lemongrass stalks, thinly sliced
  • 4 kaffir lime leaves, thinly sliced
  • 1 red onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 inches fresh turmeric, grated (or 2 teaspoons turmeric powder)
  • 2 inches fresh galangal, grated (or 2 teaspoons galangal powder)
  • 3 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons vegetable oil
  • Banana leaves or aluminum foil for wrapping

Instructions:

    Step 1
  • In a bowl, combine the lemongrass, kaffir lime leaves, red onion, garlic, turmeric, and galangal to create a spice paste.
  • Step 2
  • Add the tamarind paste, fish sauce, soy sauce, brown sugar, and vegetable oil to the spice paste. Mix well to form a marinade.
  • Step 3
  • Score the fish on both sides with shallow cuts to allow the marinade to penetrate.
  • Step 4
  • Rub the marinade all over the fish, including inside the cavities. Make sure the fish is well coated. Let it marinate for at least 15 minutes.
  • Step 5
  • Preheat a grill or barbecue to medium-high heat.
  • Step 6
  • Wrap each fish in banana leaves or aluminum foil, securing them well.
  • Step 7
  • Place the wrapped fish on the grill and cook for about 8-10 minutes on each side or until the fish is cooked through and has a nice char.
