Recipe of Locos with shrimp and caper dressing with olives

Shrimp takes center stage in this recipe for Locos with shrimp and caper dressing with olives, a fresh and elegant dish ideal for celebrations or a special meal. Originating from Chilean seafood cuisine, it combines the soft texture of locos (a mollusk similar to abalone) with the sweetness of shrimp, all bathed in a creamy dressing with the salty touch of capers and olives.

Why this recipe works?

The mix of flavors and textures is perfect: the slowly cooked locos become tender, the shrimp add juiciness, and the dressing ties everything together with its intense flavor. Additionally, the fresh salad of lettuce, tomato, cucumber, and avocado balances the richness of the dish. It's a versatile option served cold, ideal for warm days or as a sophisticated appetizer.

Variations and tips

  • You can substitute locos with clams or even more shrimp if you can't find them.
  • For a lighter version, use Greek yogurt instead of mayonnaise in the dressing.
  • Garnish with red pepper strips and avocado slices for a pop of color.
