  • Soy sauce, for dipping
  • Wasabi and pickled ginger for serving

Instructions:

    Step 1
  • Rinse the sushi rice in a fine-mesh strainer until the water runs clear. Drain well.
  • Step 2
  • Cook the rice in a rice cooker or on the stovetop following the package instructions.

  • While the rice is still hot, transfer it to a large, shallow bowl. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar and salt dissolve. Pour this mixture over the cooked rice.
  • Step 4
  • Using a wooden spatula, gently fold the vinegar mixture into the rice while fanning the rice to cool it down. Continue until the rice reaches room temperature.

  • Prepare a small bowl of water with a few drops of rice vinegar to wet your hands. This prevents the rice from sticking to your hands.

  • Take a small amount of sushi rice (about 2 tablespoons) and shape it into an oval or rectangular mound using your hands. Make sure it's compact and evenly shaped.
  • Step 7
  • Place a slice of your chosen seafood or topping on top of the rice. If you're using nori seaweed, wrap a strip around the base of the rice before adding the topping.

  • Serve the nigiri sushi with soy sauce, wasabi, and pickled ginger on the side. You can also add freshly sliced vegetables for extra variety.
