This hearty dish combines beets, cabbage, potatoes, and beef (or can be made vegetarian) into a comforting and nourishing bowl. Instructions:
Step 1
Heat the vegetable oil in a large soup pot over medium heat. Add the chopped onion and sauté until it becomes translucent.
Step 2
If using beef, add it to the pot and brown it on all sides.
Step 3
Stir in the grated beets, carrots, and potatoes. Cook for about 5 minutes, allowing the vegetables to soften.
Step 4
Pour in the broth, add the bay leaves, and bring the soup to a boil. Reduce the heat to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
Step 5
Add the shredded cabbage and cook for an additional 10 minutes.
Step 6
In a separate bowl, mix the tomato paste and vinegar, then add this mixture to the soup.
Step 7
Season with salt and pepper to taste, and add the minced garlic. Simmer for an additional 5 minutes.
Step 8
Remove the bay leaves and discard them.
Step 9
Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill. Enjoy your homemade Ukrainian Borscht!
