If using fresh abalones, clean and tenderize them. If using canned abalones, rinse and drain them.

Heat the vegetable oil in a wok or deep pan over medium heat. Add ginger and garlic, sauté for about 30 seconds until fragrant.

Add the abalones to the wok and sear them for 1-2 minutes on each side until they turn golden brown.

In a separate bowl, mix the chicken broth, oyster sauce, soy sauce, sugar, cornstarch, and sesame oil.

Pour the sauce mixture over the abalones, and let it come to a simmer.

Cover the wok and reduce the heat to low. Allow the abalones to braise for about 20-25 minutes, or until they are tender and the sauce thickens.

While braising, flip the abalones occasionally and baste them with the sauce.
