We thoroughly clean the chanterelles from the ground under water, that it enters well into the inner part, between the sheets to remove it, cut the part in contact with the ground and cut them into cubes.

In a saucepan with a hot oil base, add the washed and very chopped peppers, when they start to soften, add the peeled and very finely chopped onion, the chopped garlic cloves and the cayenne.

Poach everything and add the peeled tomato in small pieces. When the water released begins to evaporate and is soft, add the serrano ham, do a couple of laps.

Add the chanterelles, sauté well, let them release the water, let it reduce because a thick sauce is left, we add a teaspoon of sweet paprika and the peeled and chopped potatoes (we started to cut them on one side and with a stroke of the wrist we finished breaking them), we sauté them with the ingredients for a couple of minutes.
