  • 1 lb (450g) beef, cubed
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 1 cup rice
  • 2 large tomatoes, diced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp ground fenugreek
  • 1/4 tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

    Step 1
  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until they become translucent.

  • Add the beef cubes and brown them on all sides. Season with salt, black pepper, paprika, ground coriander, and ground fenugreek.
  • Step 3
  • Stir in the tomato paste and diced tomatoes. Cook for a few minutes until the tomatoes break down and release their juices.

  • Add the rice to the pot and stir well.

  • Pour in enough water to cover the ingredients. Bring to a boil, then reduce the heat to a simmer and cover. Let it cook for about 60-70 minutes, or until the beef is tender, and the rice is cooked.

  • Adjust the seasoning with salt, black pepper, and cayenne pepper, if desired.
