  • 200g shrimp, peeled and deveined
  • 200g mushrooms, sliced
  • 2 stalks lemongrass, cut into 2-inch pieces
  • 3-4 slices of galangal or ginger
  • 3-4 kaffir lime leaves, torn
  • 2-3 Thai bird's eye chilies, smashed
  • 200g cherry tomatoes
  • 2-3 shallots, thinly sliced
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 teaspoon sugar
  • Fresh cilantro leaves for garnish

Instructions:

    Step 1
  • In a pot, bring the chicken or vegetable broth to a boil.

  • Add lemongrass, galangal or ginger, kaffir lime leaves, and Thai chilies. Simmer for 5-10 minutes.
