4 cups of chicken or vegetable broth
200g shrimp, peeled and deveined
200g mushrooms, sliced
2 stalks lemongrass, cut into 2-inch pieces
3-4 slices of galangal or ginger
3-4 kaffir lime leaves, torn
2-3 Thai bird's eye chilies, smashed
200g cherry tomatoes
2-3 shallots, thinly sliced
2 tablespoons fish sauce
2 tablespoons lime juice
1 teaspoon sugar
Fresh cilantro leaves for garnish

Instructions:
Step 1
In a pot, bring the chicken or vegetable broth to a boil.
Step 2
Add lemongrass, galangal or ginger, kaffir lime leaves, and Thai chilies. Simmer for 5-10 minutes.
Step 3
Add shrimp and mushrooms. Cook until shrimp turns pink.
Step 4
Stir in cherry tomatoes and shallots.
Step 5
Season with fish sauce, lime juice, and sugar.
Step 6
Taste and adjust the flavors as needed. It should be spicy, sour, and slightly sweet.
Step 7
Remove from heat, remove lemongrass and lime leaves.
Step 8
Serve hot, garnished with fresh cilantro leaves.
