200g Udon noodles
2 cups dashi stock
2 tbsp soy sauce
1 tbsp mirin
1 tbsp sake (optional)
1/2 cup sliced green onions
2 sheets nori seaweed
2 boiled eggs
Kamaboko (fish cake slices, optional)

Instructions:
Step 1
Cook Udon noodles according to package instructions, then drain and set aside.
Step 2
In a separate pot, combine dashi stock, soy sauce, mirin, and sake. Bring to a gentle simmer.
Step 3
Add sliced green onions and let them soften in the broth.
Step 4
Divide the cooked Udon noodles into two bowls.
Step 5
Pour the hot broth over the noodles.
Step 6
Garnish with nori seaweed sheets, boiled eggs, and kamaboko if desired.
Step 7
Serve hot and enjoy your homemade Udon!
