  • 200g Udon noodles
  • 2 cups dashi stock
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp sake (optional)
  • 1/2 cup sliced green onions
  • 2 sheets nori seaweed
  • 2 boiled eggs
  • Kamaboko (fish cake slices, optional)

Instructions:

    Step 1
  • Cook Udon noodles according to package instructions, then drain and set aside.
  • Step 2
  • In a separate pot, combine dashi stock, soy sauce, mirin, and sake. Bring to a gentle simmer.

  • Add sliced green onions and let them soften in the broth.
  • Step 4
  • Divide the cooked Udon noodles into two bowls.
