Ingredients

  • 4 wheat tortillas
  • 100 g VEGETALIA textured pea protein
  • 100 g homemade fried tomato. Check out my cookbook
  • vegan mozzarrella or vegan grated cheese
  • Boiled corn
  • 2 tablespoons Tex-Mex seasoning. Check out my cookbook
  • Virgin olive oil

Instructions:

    Step 1
  • Hydrate the textured pea protein in freshly boiled water, rest for 10 minutes.
  • Step 2
  • Drain the pea protein and sauté in a hot pan with oil and the homemade Tex-Mex seasoning.
  • Step 3
  • Cover one side of each tortilla with homemade fried tomato, spread Tex-Mex textured pea protein in half, some corn kernels, cover with mozzarella or vegan cheese, cover with the other half of the tortilla and place in a pan or grill (lightly oiled), brown on both sides.
