Instructions:
Step 1
Hydrate the textured pea protein in freshly boiled water, rest for 10 minutes.
Step 2
Drain the pea protein and sauté in a hot pan with oil and the homemade Tex-Mex seasoning.
Step 3
Cover one side of each tortilla with homemade fried tomato, spread Tex-Mex textured pea protein in half, some corn kernels, cover with mozzarella or vegan cheese, cover with the other half of the tortilla and place in a pan or grill (lightly oiled), brown on both sides.
