Mix the flours with the salt, sugar, add the water and continue mixing, then add the grated cheese and mix everything until all the ingredients are integrated. Let the dough rest for 5 minutes.

Divide the dough into 8 small balls, crush them and make a small hole at one end of the circle.

Fry in plenty of oil at high temperature, when it blows (about 2 and a half minutes) turn it over and fry another two and a half minutes, in total 5 minutes are fried in total.

Take out the arepas and let them drain on absorbent paper. More cheese can be grated on top if desired.
