  • 4 small or 3 large eggs.
  • 1 cup of sugar.
  • ½ tablespoon of cornstarch.
  • 1 teaspoon of vanilla essence
  • 1 teaspoon of vinegar or lemon.
  • 1 cup of heavy cream.
  • 1/4 cup of powdered sugar.
  • 1 cup of pineapple in triangles.
  • 3/4 cup of passion fruit pulp (parchita or passionflower).
  • 1 cup of sugar.
  • 1/2 cup of water.

Instructions:

    Step 1
  • Separate the egg whites from the yolks and beat the egg whites until meringue.
  • Step 2
  • Gradually add the cup of sugar and, once the meringue point is reached, add the vanilla essence, vinegar and cornstarch.
  • Step 3
  • Place two 20 cm diameter circles of aluminum foil, parchment or non-stick on a baking sheet.
  • Step 4
  • Divide the mixture in two, empty it into the paper circles forming thick discs and bake for 60 minutes at 150°C.
  • Step 5
  • After the time has elapsed, turn off the oven and leave the discs inside for an additional 30 minutes.6 In a pot, place a cup of sugar, 1/2 cup of water and the passion fruit pulp together with the pineapple pieces. Cook on low heat for 20 minutes or until you get a thick syrup.
  • Step 6
  • Place the heavy cream in a bowl together with the powdered sugar and whisk until ready.
  • Step 7
  • For the assembly, we started with a meringue disc, on top of it a layer of whipped cream and a little syrup with pieces of pineapple.
