Ingredients

  • 8 cups of tortilla chips
  • 2 cups of red or green salsa (homemade or store-bought)
  • 1 cup of shredded cheese (queso fresco, queso blanco, or Monterey Jack)
  • 1/2 cup of sour cream
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of thinly sliced red onion
  • 2 avocados, sliced
  • 4 large eggs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions:

    Step 1
  • Heat about 2 inches of vegetable oil in a deep skillet over medium-high heat until it's hot but not smoking.
  • Step 2
  • Carefully add the tortilla chips to the hot oil in batches, frying until they turn golden and crisp, about 2-3 minutes per batch. Use a slotted spoon to transfer the fried chips to a paper towel-lined plate to drain excess oil.
  • Step 3
  • In a separate saucepan, heat the salsa over medium heat until it simmers. Season with salt and pepper to taste. You can also add a pinch of sugar if the salsa is too tart.

  • Gently toss the fried tortilla chips in the simmering salsa until they are well coated. Allow them to cook for another 2-3 minutes, or until the chips have softened slightly but are not soggy.

  • In a separate skillet, fry the eggs to your desired doneness (usually sunny-side-up or over-easy).
  • Step 6
  • To serve, place a portion of the saucy chips on each plate. Top with shredded cheese, allowing it to melt slightly from the heat of the chips.
  • Step 7
  • Add a dollop of sour cream, sliced avocado, and a sprinkle of chopped cilantro and sliced red onion on top of the cheesy chilaquiles.
  • Step 8
  • Finally, place a fried egg on each serving.
