Remove the skin from the salmon and cut into cubes.

Cut the avocado into cubes.

In a bowl, mix the juice of half a lemon, 2 tablespoons of olive oil, 2 tablespoons of soy sauce, 1 teaspoon of mustard and a touch of ground black pepper.

Mix the sauce with the salmon cubes.

Fill the mold, half with avocado cubes, half with salmon cubes and crush with a glass.

Unmold and optionally garnish with sesame or similar.
