Instructions:
Step 1
Clean the leeks by cutting off the ends, leaving some green. Make a longitudinal cut and remove the first layer. Wash well under the faucet. Cut them lengthwise and chop.
Step 2
Remove the ends of the courgettes and wash them very well under the tap, since we are going to use them with the skin. Cut lengthwise and chop.
Step 3
Peel the carrots and chop them.
Step 4
Put the oil in a pan and fry all the vegetables with a pinch of salt until soft and set aside.
Step 5
Beat the eggs in a bowl and add the cream and mix until it blends.
Step 6
Season with pepper, nutmeg and a little salt.
Step 7
Add the sautéed vegetables to the bowl, draining the oil well and leaving it in the pan, and the tacos of Serrano ham. Mix so that everything is well distributed.
Step 8
Pour into a mold pre-greased with butter. I used a deep, rectangular mold measuring 31 by 12 cm.
Step 9
Bake at 200º with the preheated oven for 25 minutes or until it has set.
