Instructions:
Step 1
Place a slice of cheese on the lower half of a long slice of cooked ham and then fold the ham in half into a booklet. If you use square slices, take two and put the cheese between them. Repeat this step until you have all the San Jacobos mounted.
Step 2
Heat oil in a pan. Now go through the San Jacobos through the flour. This step is important because if you take them directly to the egg without going through the flour, the egg would not hold well to the ham and then you would have to make a double breading.
Step 3
Whisk the eggs with a pinch of salt (about a third of a small tablespoon with salt). Then pass the floured Sanjacobos through the egg. Let them soak well on both sides.
Step 4
Then put them in the breadcrumbs and bread the SanJacobos thoroughly.
Step 5
When the oil is hot, fry the San Jacobos on both sides. As they are so thin, they are fried in a couple of minutes, when they are golden, remove them from the oil and leave them on kitchen paper so that they absorb excess fat (this way the breading will remain crispy and the San Jacobos will be less fatty). And that's it... out of the kitchen and out to eat!!!!!
