Cook the fresh miki noodles according to package instructions. Drain and set aside.

In a large pan, heat some cooking oil over medium heat. Sauté the chopped onions and minced garlic until they become fragrant and translucent.

Add the ground pork and cook until it turns brown and fully cooked. Break it apart into smaller pieces as it cooks.

Pour in the soy sauce, vinegar, and fish sauce. Mix well and let it simmer for a few minutes until the pork absorbs the flavors.

Season the pork mixture with ground black pepper. Adjust the seasoning with salt if necessary. Keep it warm.

In a separate pan, poach four eggs. You can do this by bringing water to a simmer, adding a bit of vinegar, and carefully cracking the eggs into the simmering water. Cook until the egg whites are set but the yolks are still slightly runny. Remove them with a slotted spoon and set aside.

To assemble the Pancit Batil Patong, place a serving of cooked miki noodles on a plate.

Top the noodles with a generous amount of the cooked ground pork mixture.

Sprinkle chopped green onions and spring onions over the pork.
