Spread beef slices on a cutting board and season with salt and pepper.

Spread a layer of mustard on each slice of beef.

Place a slice of bacon, onion slices and pickle slices in the center of each slice of beef.

Roll up the slices of meat, making sure the filling is well sealed inside.

Heat the vegetable oil in a large pot over medium-high heat.

Brown the beef rolls on all sides until well seared.

Add the beef stock, red wine, bay leaves and thyme to the pot.

Reduce the heat to low, cover the pot and simmer for about 2 hours or until the meat is tender.
