Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets and bake until golden brown and puffed.
In a saucepan, heat milk with the scraped vanilla bean until just simmering.
In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
Slowly pour the hot milk over the egg mixture, whisking constantly. Return the mixture to the saucepan and cook until thickened.
Remove the vanilla bean and let the pastry cream cool.
Assemble the Millefeuille by layering puff pastry and pastry cream. Repeat, finishing with a pastry layer on top.
Dust with confectioners' sugar. Chill for an hour before slicing and serving.
