    Heat the vegetable oil in a large soup pot over medium heat. Add the chopped onion and sauté until it becomes translucent.

    If using beef, add it to the pot and brown it on all sides.

    Stir in the grated beets, carrots, and potatoes. Cook for about 5 minutes, allowing the vegetables to soften.

    Pour in the broth, add the bay leaves, and bring the soup to a boil. Reduce the heat to a simmer and cook for 15-20 minutes, or until the vegetables are tender.

    Add the shredded cabbage and cook for an additional 10 minutes.

    In a separate bowl, mix the tomato paste and vinegar, then add this mixture to the soup.
