    Open and drain the water from the canned fish, pour the mackerel into a medium bowl, flake it with a fork, and remove any traces of bones. Set aside.

    With the flaked mackerel, add the chopped onion and bell pepper, and complement with chopped fresh cilantro or parsley to taste, along with one egg. Add the breadcrumbs and the two eggs.

    Mix everything with a wooden spoon or with clean hands until you obtain a uniform and compact mixture. Season with salt and pepper to taste and set aside.

    Shape the croquettes to about 10 centimeters in diameter, gently flatten them with your fingers, and place them on a buttered baking sheet or tray.
