    Peel the ripe plantains and cut them into chunks.

    Boil the plantain chunks in water until they are soft and tender, about 15-20 minutes.

    Drain the cooked plantains and mash them into a smooth consistency.

    While the mashed plantains are still warm, knead them with your hands to form a smooth dough.

    Take a small portion of the plantain dough and flatten it in your palm.

    Place a spoonful of sweetened black beans in the center of the flattened dough.

    Carefully fold the dough over the beans to encase them completely. Shape it into a smooth oval or ball.

    Heat vegetable oil in a deep frying pan over medium heat.

    Fry the stuffed plantain balls until they are golden brown and crispy on the outside, about 3-4 minutes per side.

    Remove the rellenitos from the oil and drain on paper towels to remove excess oil.
