Discover how to make a delicious no-bake cheesecake, an easy and refreshing recipe perfect for any occasion. This cheesecake features a crunchy cookie and butter base, and a creamy filling of cream cheese, heavy cream, and sugar, set with gelatin for a firm yet smooth texture. Since it requires no baking, it's perfect for hot days or when you want a quick dessert without fuss.
Why this recipe works
The combination of Philadelphia-style cream cheese and whipping cream provides a balanced creaminess, while unflavored gelatin ensures the cake holds its shape when unmolding. Tomato jam (or your preferred jam) adds a sweet and tangy touch that contrasts with the smooth filling, making it a versatile dessert that pleases everyone.
Variations and tips
- You can substitute tomato jam with berries, mango, or passion fruit.
- For a lighter version, use low-fat cream cheese and light cream.
- If you don't have a springform pan, line a regular pan with plastic wrap for easier unmolding.
This cheesecake is ideal for celebrations, birthdays, or simply as a treat. Its preparation is simple and the result is spectacular.

For the filling, in a pot, put the cream cheese, cream and sugar. We mix while we heat over low heat. Don't let it boil. The idea is that the ingredients melt and integrate well with each other. Dissolve the unflavored gelatin and pour it over the mixture.
