Recipe of Pastelón

    Heat vegetable oil in a large skillet over medium-high heat. Fry plantain slices until golden brown, about 2-3 minutes per side. Drain on paper towels and set aside.

    In the same skillet, add a bit more oil if needed and sauté the chopped onion, garlic, and bell pepper until softened, about 5 minutes.

    Add the ground beef and cook until browned. Stir in the tomato sauce, dried oregano, salt, and pepper. Simmer for 10 minutes, then remove from heat.

    Preheat your oven to 350°F (175°C). Grease a baking dish with cooking spray.

    Place a layer of fried plantains in the bottom of the baking dish.

    Spoon half of the seasoned ground beef mixture over the plantains.

    Sprinkle half of the shredded mozzarella cheese on top.

    Repeat the layers: plantains, beef, and cheese.

    Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
