Remove the membrane attached to the bones from the rib rack and dry with paper towels. In a mortar, crush the garlic, parsley, oregano, and sea salt. Add the paprika, merkén, ground pepper, oil, and mix well.

Rub the rib rack with the mixture of these spices, place it in a baking tray, and let it marinate for 2 hours in the refrigerator. Take the rib rack out of the refrigerator 1 hour before roasting. Mix the pork broth with the wine and apple cider vinegar and pour it into the baking tray.

Cook the rib rack in a preheated oven at 180°C / 350°F for approximately 1 and 1/2 hours. Do not let the juices dry out; add water when necessary.

After this time, mix 1/4 cup of tomato sauce with the juices and brush it over both sides of the ribs. Continue doing this for the next 30 minutes.
