Heat the olive oil in a tagine or large, heavy-bottomed pot over medium heat.

Add the finely chopped onion and minced garlic, and sauté until they become translucent.

Add the cubed lamb and brown it on all sides.

Stir in the ground cumin, ground coriander, ground cinnamon, paprika, and ground ginger. Cook for a few minutes to release their flavors.

Season with salt and pepper to taste.

Add the dried apricots, halved dried figs, and slivered almonds, and stir to combine.

Pour in the chicken broth and honey, and bring the mixture to a simmer.

Reduce the heat to low, cover, and let it simmer for about 45 minutes to 1 hour, or until the lamb is tender.

Before serving, garnish with fresh cilantro leaves.
