    Preheat your oven to 325°F (165°C).

    In a bowl, mix together the softened butter, chopped sage, rosemary, thyme, and season with salt and pepper. This will be the herb butter for the turkey.

    Remove the giblets and neck from the turkey, and pat it dry with paper towels.

    Carefully separate the skin from the turkey breast and legs, being gentle to not tear the skin.

    Spread the herb butter under the skin, making sure to coat the turkey meat evenly. Season the outside of the turkey with more salt and pepper.

    In a large roasting pan, place the chopped onion, celery, and carrots. Set the turkey on top of the vegetables.

    In a separate bowl, combine the cubed stale bread, poultry seasoning, garlic powder, onion powder, and black pepper. Mix well.

    Stuff the turkey cavity with the bread mixture, and truss the legs together with kitchen twine.

    Pour the chicken or turkey broth into the bottom of the roasting pan.

    Cover the turkey with aluminum foil and roast in the preheated oven for about 3.5 to 4 hours, basting every 30 minutes with the pan juices.

    The turkey is done when a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C). Make sure the stuffing reaches the same temperature.
