Preheat your oven to 375°F (190°C).

Place each chicken breast between plastic wrap and pound them to an even thickness. Season with salt and pepper.

In three separate shallow dishes, place the flour in one, whisk the eggs in another, and combine the breadcrumbs with grated Parmesan cheese in the third.

Dip each chicken breast into the flour, then the beaten eggs, and finally coat them with the breadcrumb mixture, pressing gently to adhere.

In a large skillet, heat olive oil over medium-high heat. Fry the breaded chicken breasts for about 3-4 minutes per side, or until golden brown and cooked through. Place them on a paper towel-lined plate to remove excess oil.

In a separate ovenproof dish, spread a thin layer of marinara sauce. Place the fried chicken breasts on top.

Spoon more marinara sauce over each chicken breast, and sprinkle mozzarella cheese on top.

Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and golden.
