Recipe of Spring Chicken Salpicón
Vida Recetas Editorial
Spring chicken salpicón is a fresh and complete salad, ideal for warm days or a light but nutritious dinner. This chicken recipe combines tender breast with crunchy vegetables like carrot, celery, and lettuce, plus tomato and onion, all dressed with a citrus touch of lemon and olive oil. It is a versatile dish that works as a main course or as a side dish, and it appeals to both children and adults.
Originating from Latin American cuisine, salpicón adapts to each region; this spring version adds hard-boiled eggs and rice, making it a balanced meal. The preparation is simple: cook the chicken in cubes with a little oil, prepare the fresh vegetables, and mix them with the rice and eggs. The result is a colorful salad with varied textures and a refreshing flavor.
Perfect for making ahead, as the flavors blend better if it rests for a few minutes. Also, it is an excellent way to include more vegetables in your daily diet. If you are looking for an easy, healthy, and flavorful recipe, this chicken salpicón is your choice.
