Add the egg to a bowl, add the salt to taste (optional: I add a splash of milk) and beat everything until the mixture is smooth.

In the meantime, prepare the skillet in vitro with a little olive oil.

Pour the mixture into the pan when it is hot and let the bottom of the tortilla cook. Be careful not to stick to the pan.

Turn the tortilla over and let it rest again for the other part to cook.

Put the fresh cheese on one side of the tortilla and with the spatula, fold the other part of the tortilla on top of the cheese.

Turn the tortilla around so that the cheese melts or stays warm (to taste).

Remove the tortilla and make pa amb tomàquet to combine the dish.

Toast the bread, scrub the tomato on top, add oil and salt.
