    Season pork chops with salt and pepper.

    Dredge in flour, dip in beaten eggs, and coat with panko breadcrumbs.

    Heat vegetable oil in a pan and fry pork until golden brown. Drain on paper towels.

    In the same pan, sauté onions until translucent.

    Combine sauce ingredients in a bowl and pour over onions.

    Slice fried pork into strips and place them on top of the onions.

    Beat 4 eggs and pour evenly over the pork.

    Cover and cook until the eggs are set (about 5 minutes).

    Serve over a bowl of hot steamed rice.

    Garnish with green onions or pickled ginger if desired.
