Recipe of Garlic rabbit

Garlic rabbit is a traditional Spanish recipe that combines the lean, flavorful meat of rabbit with the intense aroma of garlic and the smoky touch of paprika. It is an ideal dish for those looking for a healthy and flavorful alternative for their family lunches or dinners, and it is also very easy to prepare even for beginner cooks.

A dish with history and versatility

Originally from the inland regions of Spain, garlic rabbit has become a classic of rural gastronomy. Its simplicity and its ability to enhance the natural flavor of the meat make it perfect for any occasion, from a weekday meal to a special celebration. It also allows for variations: you can add herbs like rosemary or thyme, or a splash of white wine for a more sophisticated touch.

In this recipe, the rabbit is slowly cooked in olive oil with whole garlic cloves that are slightly cut, allowing the meat to absorb all the aromas. The garnish of potato and zucchini, cooked al dente, provides a contrast of textures and a perfect balance between protein and vegetables. The result is a juicy, golden dish with a deep flavor that will delight the whole family.

Directions

  1. 1

Peel and cut the zucchini and potatoes into small, similar cubes. Boil in boiling salted water for 10 minutes so that they are al dente

  2. 2

Remove from the water and drain. Book

  3. 3

Season the rabbit and fry in a pan with hot oil at medium high power (7 out of 10) with a lid for 10 minutes

  4. 4

After 10 minutes, turn over and add the garlic cloves with a cut in the middle and the liver. Let it fry covered for another 10 minutes. If we like the meat more golden brown, or some pieces are less done, we wiggle and leave a little more
