Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced onions and sauté until they become soft and golden brown, about 15 minutes. Remove the onions from the skillet and set them aside.

In the same skillet, add the remaining butter. Season the calf's liver slices with salt and pepper. Sear the liver slices for 1-2 minutes per side until they are nicely browned but still pink inside. Remove the liver from the skillet and set it aside.

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Pour in the white wine and cook for a minute to deglaze the pan.

Return the caramelized onions to the skillet and stir them together with the garlic and wine.

Place the seared calf's liver slices on top of the onions. Pour in the chicken or beef broth and let it simmer for a few minutes to heat everything through and finish cooking the liver to your desired level of doneness.

Garnish with fresh chopped parsley and serve your delicious calf's liver and onions immediately. Enjoy this classic Italian dish with a side of your choice, such as mashed potatoes or polenta.
