Recipe of Brazilian Feijoada
Brazilian feijoada is a traditional and hearty stew, considered the national dish of Brazil. Originating in the colonial era, this stew combines black beans with a variety of pork and beef cuts, slowly cooked to achieve a creamy texture and deep flavor. It is ideal for family gatherings or celebrations, as its preparation is labor-intensive but the result is spectacular.
Why does this recipe work?
- Soaking the beans beforehand ensures even cooking and reduces cooking time.
- The mix of smoked and fresh meats adds layers of flavor that meld with the beans.
- It is traditionally served with white rice, orange slices, and farofa, which balance the intensity of the stew.
This version includes ingredients easily found in supermarkets, such as smoked sausage, bacon, and dried beef. For an authentic touch, serve it with couve (sautéed collard greens) and caipirinha. Perfect for lovers of substantial stews.
