Heat a bit of vegetable oil in a large pan or wok over medium heat.
Add the green curry paste and sauté for a minute until fragrant.
Add the chicken pieces and cook until they start to brown.
Pour in the coconut milk and chicken or vegetable broth. Stir well.
Add the sliced red and green bell peppers, zucchini, and torn kaffir lime leaves if using.
Let the curry simmer for about 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
Stir in the fish sauce and sugar, adjusting the taste to your liking.
Remove from heat and add the Thai basil leaves, stirring until wilted.
Serve the Green Curry hot over cooked jasmine rice.
