Recipe of Tuna fritters
They are delicious and really very quick to make. You can enjoy fried tuna with the vegetables you like the most, their simple way of preparation, the raisins in flour, eggs and breadcrumbs. Then you fry them and serve them with a salad, a delicious sandwich. They serve as a starter or an accompaniment to the main course.
For this recipe, we recommend tuna on tenderloins in water, because it is healthier; but it is very important that you drain the water content well, since oil and water are an explosive combination when it comes to frying them.

In a bowl, crumble the tuna, mustard, lemon zest, parsley, chives, a pinch of salt, and ground black pepper.

Add two eggs, and stir. If it's liquid we don't add more eggs, but if it's too dry add the last egg.

With clean hands, go about making tuna balls and then mash them.

Roll them through flour, egg, and breadcrumbs.

Send them to the fridge (refrigerate) for an hour to compact them.

Fry them in plenty of oil on low heat for a few minutes until golden brown.

Take them out of the oil and place them on a rack so that the oil can drain.
