    For the vegetables: In a bowl large enough, make a brine with the water, a tablespoon of salt and another tablespoon of a mixture of spices for moussaka Cut the eggplant into slices of 5 millimeters more or less and peel and cut the potatoes into slices of the same thickness. Throw the eggplants in the brine first and on top of the potatoes, so the eggplant does not float. Let it macerate for half an hour. In a pot, add the brine with the vegetables and cook 10 minutes over high heat. Drain

    For the stir-fry: In a hot pan, add the oil, onion, minced meat and cook over medium-low heat for 10 minutes. Add the diced tomato, salt, pepper and spices. Continue poaching for another 10 minutes. Temper and reserve

    For the bechamel: In the same hot pan to make the sauce, add the oil, flour and toast it. Add a little milk and stir. Add another splash of milk and stir again. Repeat until you add all the milk and get a homogeneous cream without lumps. We added the Ras to the Hanout and remove again

    We assemble the plate in two trays of the right size (small) for the basket of our fryer. You can also make this recipe on a single tray and in a traditional oven. But I have used the fryer and therefore I have to do it in two, a rectangular Pyrex one and a metal bowl 18 cm in diameter.
