How to Make Supplì

Instructions

    Step 1
  • In a saucepan, heat the chicken or vegetable broth over medium heat until it simmers. Reduce the heat to low to keep it warm.
  • Step 2
  • In another large saucepan, sauté the finely chopped onion and minced garlic in a bit of olive oil until they become translucent.
  • Step 3
  • Add the Arborio rice to the onion and garlic mixture and stir for a couple of minutes until the rice becomes translucent at the edges.
  • Step 4
  • Pour in the dry white wine and cook until it's mostly absorbed by the rice.
  • Step 5
  • Begin adding the warm broth one ladleful at a time to the rice mixture. Stir frequently and allow each ladle of broth to be mostly absorbed before adding more. Continue this process until the rice is creamy and cooked al dente, which should take about 18-20 minutes.
  • Step 6
  • Remove the cooked rice from the heat and stir in the grated Parmesan cheese and chopped fresh parsley. Season with salt and black pepper to taste.

  • Allow the rice mixture to cool completely. Then, take a small portion of the rice mixture and flatten it in your hand. Place a small cube of mozzarella cheese in the center and encase it with the rice, forming a small oval-shaped croquette.
  • Step 8
  • Roll each supplì in flour, dip it in beaten eggs, and then coat it with breadcrumbs, ensuring they are evenly coated.
  • Step 9
  • Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (180°C). Carefully lower the supplì into the hot oil and fry until they turn golden brown and crispy, about 3-4 minutes. Drain on paper towels.
  • Step 10
  • Serve your hot and crispy supplì immediately. Enjoy!
