How to Make Caldereta
Instructions
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the beef and cook until golden brown on all sides.
- Add the onion and garlic and cook until golden brown.
- Add the crushed tomatoes, tomato paste, beef broth, bay leaves, oregano, salt and pepper to the pot and mix well.
- Bring the mixture to a boil, then lower the heat to medium-low and let it simmer for 20 minutes.
- Add the carrots, peppers, peas and potatoes to the pot and mix well.
- Cover and simmer for another 10 minutes or until vegetables are tender.
- Serve warm with cooked rice.
