How to Make Peppers stuffed with minced meat.

    Step 1
  • First of all, we wash the peppers. Medium-sized peppers. We give them a horizontal cut at the top, creating a kind of lid. And we freed them from seeds.
  • Step 2
  • Chop the onion and the white part of the leek.
  • Step 3
  • We grate the carrot.
  • Step 4
  • In a frying pan, with a little olive oil, sauté the vegetables over medium heat.
  • Step 5
  • In a small pot we cook the rice, we will need 300 g of rice already cooked.
  • Step 6
  • In a bowl, mix the minced beef with rice and poached vegetables. Add salt and pepper to taste, and chopped parsley. We mix.
  • Step 7
  • Fill the peppers, without going over the edge. We covered it with the upper part that we had cut.
  • Step 8
  • In a large pot, add crushed tomato, salt it to taste and place the stuffed peppers, with lids on top, add the water, black peppercorns, bay leaves, half an onion, a piece of leek, an Italian green pepper cut into pieces, to give more flavor to the sauce.
  • Step 9
  • Cover the pot and cook the peppers for 40 minutes.
  • Step 10
  • You can grind the sauce with the vegetables that were inside, removing the bay leaves, but this step is optional.
  • Step 11
  • Serve the peppers on a plate and serve with the sauce and a little fresh cream or natural Greek yogurt.
