How to Make Welsh Rarebit
Instructions
- Start by toasting the bread until it's nice and crispy. You can use a toaster or the oven for this.
- In a saucepan over low heat, melt the butter. Once melted, add the beer (or milk) and stir until well combined.
- Gradually add the grated cheddar cheese, stirring continuously until it's fully melted and you have a smooth cheese sauce.
- Stir in the Dijon mustard, Worcestershire sauce, cayenne pepper, salt, and black pepper. Mix until all the ingredients are well incorporated.
- In a small bowl, beat the egg yolks. Gradually add a bit of the cheese sauce to the beaten yolks while whisking vigorously. This is called tempering and prevents the yolks from curdling when added to the hot sauce.
- Pour the tempered yolks into the cheese sauce, whisking constantly. Continue to cook for a few more minutes until the sauce thickens slightly.
- Place two slices of toasted bread on each plate.
- Generously ladle the hot cheese sauce over the toast, making sure it covers the bread completely.
- Optionally, place the rarebit under a broiler for a minute or two until the top is bubbly and lightly browned.
