How to Make Pea cream with sweet potato
Instructions
- Peel and cut the sweet potato small, reserving some thin slices.
- Chop the onion and leek. Poach in a saucepan with a little extra virgin olive oil over low heat.
- When they are poached, add the sweet potato in pieces, raise the heat to medium, season and sauté for a few minutes.
- Cover with water, let it cook until the sweet potato is soft, then add the peas and let them cook.
- Whisk well and add salt if necessary.
- Fry the reserved sweet potato slices in a pan with a little extra virgin olive oil and over high heat.
- Plate the cream, add some sweet potato chips and serve hot freshly made.
