How to Make Caramelized popcorn pancakes
Instructions
- We started by placing the corn and the oil and making the cotufa or popcorn in a traditional way.
- In a pan and using a WOODEN spoon (the plastic ones melt) we add the sugar and butter
- We melt the butter and sugar and start mixing tirelessly until a caramel forms, it takes about 5 minutes on medium heat... don't be scared because at first it seems that sugar and butter separate, but in the end they come together leaving a beautiful golden caramel.
- After having the caramel ready, we turn off the pan.
- Add a spoonful of baking soda (this will help keep the caramel not so hard when it cools down)
- Pour the caramel over the stoves and stir everything very well, transfer it to a tray or a bowl and let it cool.
