  • Grease the ramekins with butter and dust them with cocoa powder. This ensures the fondants easily release after baking.

  • In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can use a microwave or a double boiler for this. Stir until smooth and set aside to cool slightly.

  • In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
