- Preheat your oven to 200°C (392°F) and place a baking sheet inside to preheat.
- Grease the ramekins with butter and dust them with cocoa powder. This ensures the fondants easily release after baking.
- In a heatproof bowl, melt the dark chocolate and unsalted butter together. You can use a microwave or a double boiler for this. Stir until smooth and set aside to cool slightly.
- In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and slightly thickened.
- Gently fold the melted chocolate mixture into the egg mixture.
- Sift the all-purpose flour over the chocolate mixture and gently fold it in until no streaks of flour remain.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on the preheated baking sheet and bake for 12-14 minutes. The fondants should have a set exterior but a slightly wobbly center.
- Carefully remove the ramekins from the oven and let them cool for a minute or two.
- To serve, run a knife around the edge of each fondant to loosen it, then invert it onto a plate.
