Instructions
- We will start by cutting the filleted garlic and we will do it over low heat with enough oil and half a chilli pepper. When they are tender, reserve and remove the chilli pepper.
- Thaw the boletus in the fridge and before throwing them into the pan drain well so that they release excess water. Then add a splash of oil and make them almost grilled with a pinch of salt. Add the candied garlic and sauté everything together.
- In another large, deep skillet, fry the potatoes. I don't let them soak and dry them with paper so they don't have any water. They are super crispy. Remove the oil with absorbent paper and then remove it so that they do not soften.
- Then fry the eggs with hot oil so that they are tender. A pinch of salt in the yolk and you assemble your dish. First the potatoes, then the boletus with garlic and finally the eggs and the truffle powder that gives it the masterful touch.
