How to Make Akara
Instructions
- Soak the black-eyed peas in water for about 4 hours or overnight to soften them.
- Peel and chop the onion, and deseed the hot peppers.
- Drain and rinse the black-eyed peas, then transfer them to a blender or food processor.
- Add the onion, hot peppers, crayfish, and salt to the blender with the peas.
- Blend until you have a thick and smooth batter. You can add a little water if necessary, but keep it as thick as possible.
- Heat vegetable oil in a deep frying pan over medium-high heat.
- When the oil is hot, scoop spoonfuls of the batter and carefully drop them into the oil. Fry until golden brown, about 3-4 minutes, turning to ensure even cooking.
- Remove the akara from the oil and drain on paper towels to remove excess oil.
- Serve your delicious akara hot with pap (akamu) or bread.
