How to Make Akara

Instructions

    Step 1
  • Soak the black-eyed peas in water for about 4 hours or overnight to soften them.
  • Step 2
  • Peel and chop the onion, and deseed the hot peppers.
  • Step 3
  • Drain and rinse the black-eyed peas, then transfer them to a blender or food processor.
  • Step 4
  • Add the onion, hot peppers, crayfish, and salt to the blender with the peas.
  • Step 5
  • Blend until you have a thick and smooth batter. You can add a little water if necessary, but keep it as thick as possible.
  • Step 6
  • Heat vegetable oil in a deep frying pan over medium-high heat.
  • Step 7
  • When the oil is hot, scoop spoonfuls of the batter and carefully drop them into the oil. Fry until golden brown, about 3-4 minutes, turning to ensure even cooking.
  • Step 8
  • Remove the akara from the oil and drain on paper towels to remove excess oil.
  • Step 9
  • Serve your delicious akara hot with pap (akamu) or bread.
