How to Make Golfeados
Instructions
- Place the cardboard over medium heat in a pot with approximately 100 milliliters of water, until it dissolves and forms a reduction that is not very liquid.
- Grate the cheese finely and reserve the bread in a bowl.
- Place the pre-sifted flour (leaving a little to use on the counter), salt, sugar, butter, yeast, water and mix well until all the ingredients are incorporated into a dough.
- Add flour to a clean counter and start kneading until the dough has a smooth texture.
- Let the dough rest for at least 20 minutes with a kitchen tissue on top of it, so that the yeast works and doubles in size.
- After that time, we knead a little more to work the dough and remove the air acquired by the yeast.
- With the help of a rolling pin, we flatten the dough to form a more or less even square, leaving 1 cm thick in the dough (before we preheat the oven to 180 ºC).
- We place the cardboard all over the table except for the edges and when finished we roll it up on itself so that it forms a cylinder.
- With the help of a knife, we cut small wheels of approximately 6 to 8 centimeters and then flatten them with the palm of the hand.
- Place the fried potatoes on a buttered tray, put them in the oven for 20 minutes.
- Take out the sauces, add the cheese and bake for the last 15 minutes or until they are golden brown.
