How to Make Chilaquiles

- Heat about 2 inches of vegetable oil in a deep skillet over medium-high heat until it's hot but not smoking.
- Carefully add the tortilla chips to the hot oil in batches, frying until they turn golden and crisp, about 2-3 minutes per batch. Use a slotted spoon to transfer the fried chips to a paper towel-lined plate to drain excess oil.
- In a separate saucepan, heat the salsa over medium heat until it simmers. Season with salt and pepper to taste. You can also add a pinch of sugar if the salsa is too tart.
- Gently toss the fried tortilla chips in the simmering salsa until they are well coated. Allow them to cook for another 2-3 minutes, or until the chips have softened slightly but are not soggy.
- In a separate skillet, fry the eggs to your desired doneness (usually sunny-side-up or over-easy).
- To serve, place a portion of the saucy chips on each plate. Top with shredded cheese, allowing it to melt slightly from the heat of the chips.
- Add a dollop of sour cream, sliced avocado, and a sprinkle of chopped cilantro and sliced red onion on top of the cheesy chilaquiles.
- Finally, place a fried egg on each serving.
